A few weeks ago my sister came over to do some baking. She brought a bag of apples from the tree in her backyard, which has been steadily producing apples all summer and into Autumn. In an effort to keep up with it, my sister has tried pretty much every recipe involving apples. We tried making one of her favourites- Smitten Kitchen’s Mom’s Apple Cake. This cake is beyond delicious and pretty easy to make. To take this Autumn cake to the next level we recommend serving it warm with vanilla ice cream.
Smitten Kitchen’s Apple Cake
2 3/4 cups flour
1 tablespoon baking powder
1 teaspoon salt
1 cup vegetable oil
2 cups sugar
1/4 cup orange juice
2 1/2 teaspoons vanilla
Preheat oven to 350 degrees. Mix peeled apple chunks with cinnamon and sugar and set aside.
Mix together the flour, baking powder, and salt. In a separate bowl whisk the oil, orange juice, sugar, and vanilla. Add the wet ingredients to the dry ingredients. One at a time, add the eggs to the mixture. Using a spatula scrape down the edge of the bowl to ensure all the ingredients are incorporated.
Pour half of the batter into a greased tube pan. Spread half the apples over the batter. Pour the remaining batter into the pan and arrange the other half of the apples on top. Bake for about an hour and a half. Allow the cake to cool completely before removing it from the pan.
