Last fall, while we were traveling in Bali, Jonathan discovered his love for banana pancakes. I’m pretty sure he ate them every single day. His favourite pancakes were at a hotel we stayed at on Gili Meno. The owner, Arief, would fry them up every morning while we sat in front of the only fan and chickens puttered around at our feet. I wanted to try to recreate these pancakes as a treat for Jonathan. After some searching I found this recipe for Wayan’s Banana Pancakes. They came out fairly close to Arief’s although I don’t think anything can compare to the real deal! I modified the recipe slightly by cutting up the banana’s and using almond milk instead of regular milk. Full recipe and a picture of me being excited about my favourite hot sauce in Bali below!
- 1 cup all purpose flour
- 1 egg lightly beaten
- 1/4 tsp salt
- 1 cup unsweetened almond milk
- 4 Tbs butter
- 3 ripe bananas
Mix together flour, egg, almond milk and salt. Heat a crepe pan on medium and lightly fry about 6 slices of banana until they begin to caramelize.
Pour pancake batter over the banana’s in 1/2 cup batches and cook on medium heat until holes begin to appear. Flip and cook for a few more minutes on the other side until golden brown.
Serve with sliced strawberry, blueberries and syrup. Enjoy!
