Tomato Basil Soup

A few days ago my mom made the best tomato soup in the world. I know, that’s a bold statement. Let’s take a moment to let that sink in. I’ve always been a big fan of tomato soup and this one is super simple to make. I also added some grilled cheese croutons to it because cheese makes everything better!

1 tbsp olive oil

2 onions, chopped

2 garlic cloves, minced

28 oz canned tomatoes

1 cup low sodium veggie stock

1 cup water

2 tbsp chopped fresh basil

2 tsp dried basil

2 tsp sugar

1 tbsp balsamic vinegar

a sprinkle of dried chili’s

In a large saucepan saute the onion and garlic over medium heat. Add the tomatoes, stock, water, basil, sugar, vinegar, and hot pepper and bring to a boil. Reduce the heat and let simmered uncovered for about 30 minutes. Remove from the heat and let cool.

Puree the soup in the saucepan using an immersion blender and blend until smooth. Simmer until heated through and add salt and pepper. To make it extra delicious serve with Parmesan cheese and grilled cheese croutons!
